Barrell Craft Spirits, founded in Louisville in 2013, sources aged American whiskey from multiple distilleries and applies their own finishing programs to produce expressions that can’t come from any single source. The Dovetail is Barrell’s most recognized blend — a whiskey that uses Madeira, Port, and Bourbon cask finishing on a rye-heavy American whiskey base to produce a richly complex, fruit-forward expression.
