This exceptional lager is crafted from Elwha, a variety of spelt grown in Washington’s Horse Heaven Hills by the Moon Family using no-till farming and dryland irrigation. An ancient grain with origins tracing back over 5,000 years, spelt imparts depth, softness, and a distinctively nutty character.
The Elwha Spelt Pilsner opens with airy aromas of lemongrass, mint, and green cardamom. On the palate, it’s precise and refreshing, with fine limestone minerality and a pillowy white foam that enhances its elegance. The result is a lager that is both energetic and refined, with a soft but structured texture and remarkable drinkability.
Hanabi Lager Co., based in Napa, California, is led by brewer Nick Gislason and viticulturist Jennifer Angelosante. Drawing from their winemaking backgrounds—Nick is also the winemaker at Screaming Eagle—the duo is known for their devotion to heirloom grains and traditional, slow-fermentation lagering. Each release is a study in agricultural expression through beer, focusing on showcasing the flavor of the grain above all.
