Mezcal Alipús San Baltazar is a single-village Oaxacan mezcal — fermented with wild yeast in pine vats by Mezcalero Don Cosme Hernandez, made from agave espadín grown at 5,700 ft in rocky soil for a distinctive high-elevation character.
Alipús is a co-op of Oaxacan mezcal producers who, with Los Danzantes, craft single-village mezcals that each express the terroir and traditions of their village and mezcalero. Best enjoyed neat, sipped slowly.
