Mimolette 12 Month is a traditional French cow’s milk cheese aged for one year to develop its signature dense texture, vibrant orange paste, and rich nutty flavor. Originally inspired by Dutch Edam but distinctly French in character, the cheese is known for its rugged natural rind and smooth interior that becomes firmer and more concentrated with aging.
Balanced and savory, the flavor reveals notes of toasted hazelnuts, caramel, browned butter, and subtle butterscotch with a slightly sweet, lingering finish. Compared to older Extra Vieille Mimolette, the 12-month version remains smoother and creamier while still offering rich complexity and gentle crystalline texture. Excellent with Belgian ales, Champagne, dried fruit, and toasted nuts.
