Point Reyes Toma is a semi-firm, washed-curd cow’s milk cheese handcrafted by Point Reyes Farmstead Cheese Company in Northern California using milk from the Giacomini family’s Holstein herd. Inspired by the rustic Italian “toma” style traditionally made by alpine farmers, the cheese is aged to develop a supple texture and approachable flavor profile that bridges the gap between buttery table cheeses and more savory aged varieties.
Creamy, mellow, and versatile, Toma offers notes of brown butter, sweet cream, toasted nuts, and grassy pasture with subtle tang and earthy depth. Its smooth, elastic texture melts beautifully, making it excellent for cheeseboards, grilled cheese, burgers, pasta, and fondue. Balanced and crowd-pleasing, it pairs especially well with Pinot Noir, farmhouse ales, apples, and crusty bread.
