The sour mash process — using a portion of previously fermented grain to start the next fermentation, ensuring consistency and a slightly acidic, complex flavor character — is the same technique used in Tennessee whiskey production and traditional Appalachian moonshining. Sugarlands applies it here to produce a crystal-clear, unaged spirit with the subtle sweetness of corn and cane sugar and the clean, polished finish of well-made moonshine.
